It’s said that the Seapea Fizz is named for song writer and composer Cole Porter (the sound of the name mimicking Porter’s initials, C.P.). The pale green cocktail is a simple—yet bracing—mix of sugar, lemon and absinthe, but this somewhat astringent mixture is not to everyone’s taste.

Ingredients

  • 0.75 oz. 23ml Absinthe
  • 0.75 oz. 23ml Simple Syrup
  • 0.75 oz. 23ml Lemon Juice
  • 1 1 Egg White
  • top top Soda Water
Display: oz. ml.

Ingredients

Add all ingredients to a cocktail shaker and dry shake. Add ice and shake until well-chilled.
Strain into a coupe and top with soda water.
